What's the big fucking deal about Gluten?

I keep seeing foods with labels on it saying "GLUTEN FREE."
Wikipedia says it comes from plants.

So... What's wrong with it?

Because people who suffer from celiac disease can't absorb gluten. It just makes it easier for them to spot whether or not they can eat the product.

Yes. It's a protein derived from rye, wheat and barley.
